is a (quite common in Taiwan) variant of 姜 . The lower part of 姜 (三 田 + \u200b\u200b+ 田) meant "boundary" - somehow logical: boundaries of fields. This character is now 疆 Jiang, for example, in 边疆 biānjiāng = zone; 新疆 Xīnjiāng = Provinz im Westen Chinas.

Das alte Zeichen für Ingwer 薑 [jiāng] war also eine "Pflanze (艹) von der oder über die Grenze (三+田+田)". Übrigens: 姜 ist auch eine Vereinfachung von
葁
, eine weitere alte Form.

Hier ist Ingwer (葁) die "Pflanze (艹) aus der Gegend, wo Frauen (女) die Schafe (羊) hüten"...
